    Harvest the blue agave plant by cutting off the leaves to expose the piña (the heart of the plant).

    Steam the piñas in an oven or traditional stone oven for about 24 hours until soft.

    Once cooked, crush the piñas to extract the juice. This can be done with a mechanical shredder or by hand.

Fermentation

    Combine the extracted agave juice with water and agave nectar in a fermentation tank.

    Add yeast to the mixture and stir well to ensure it is evenly distributed.

    Allow the mixture to ferment for about 7-10 days at a controlled temperature of around 25°C (77°F).

Distillation

    Perform a second distillation to purify the spirit further, collecting only the heart of the distillate.
