Salad Base

Method

Prepare the Salad Base

  1. 1

    Clean the Lettuce

Rinse the baby romaine lettuce under cold water to remove any dirt. Pat dry with a towel and chop into bite-sized pieces.

  2. 2

    Prepare the Vegetables

Slice the black garlic tomatoes and set aside. If you haven't already, caramelize the onions until golden brown.

  3. 3

    Add Anchovies

Chop the anchovy fillets into small pieces and set aside.

Make the Caesar Dressing

  1. 4

    Combine Ingredients

In a mixing bowl, add mayonnaise, lemon juice, Dijon mustard, Worcestershire sauce, minced garlic, salt, and black pepper.

  2. 5

    Whisk Together

Whisk the mixture until smooth and well combined. Taste and adjust seasoning if necessary.

Assemble the Salad

  1. 6

    Toss the Ingredients

In a large salad bowl, combine the chopped baby romaine, caramelized onions, black garlic tomatoes, chopped anchovies, and garlic croutons.

  2. 7

    Add Dressing

Pour the Caesar dressing over the salad mixture and toss gently until all ingredients are well coated.

  3. 8

    Garnish

Sprinkle grated Parmesan cheese on top of the salad as a garnish before serving.
