Method

Burrito Filling Preparation

  1. 1

    Cook the Vegetables

In a skillet over medium heat, add a splash of oil. Add the diced onion and bell pepper. Cook for about 5 minutes until softened, stirring occasionally.

  2. 2

    Prepare the Eggs

In a bowl, whisk together the eggs, salt, and black pepper. Pour the egg mixture into the skillet with the cooked vegetables. Cook, stirring gently, until the eggs are scrambled and just set, about 3-4 minutes.

  3. 3

    Add Bacon and Cheese

Once the eggs are cooked, add the crumbled bacon and shredded cheddar cheese to the skillet. Stir until the cheese is melted and everything is well combined. Remove from heat.

Burrito Assembly

  1. 4

    Warm the Tortillas

In a separate skillet or microwave, warm the flour tortillas until they are pliable, about 30 seconds in the microwave or 1 minute on a skillet.

  2. 5

    Assemble the Burritos

Lay a warm tortilla flat and spoon a generous portion of the egg mixture into the center. Top with a dollop of sour cream, a spoonful of salsa, and slices of avocado.

  3. 6

    Roll the Burrito

Fold the sides of the tortilla inwards, then roll from the bottom to the top to enclose the filling. Repeat with the remaining tortillas.

  4. 7

    Serve

Cut the burritos in half if desired and serve immediately while warm. Enjoy!
