Kombucha Brewing

    Prepare the Tea Base

    In a large pot, bring 4 cups of water to a boil. Once boiling, remove from heat and add 1 cup of sugar. Stir until fully dissolved. Add the 4 black tea bags to the pot and steep for about 15 minutes.

    Cool the Tea

    After steeping, remove the tea bags and allow the tea base to cool to room temperature. This is important to avoid killing the SCOBY.

    Combine Ingredients

    Once cooled, transfer the tea to a clean glass jar or fermentation vessel. Add 1 cup of starter tea and gently place the SCOBY on top.

    Ferment the Kombucha

    Cover the jar with a clean cloth or coffee filter secured with a rubber band. Place it in a warm, dark place (around 70-85°F) for 7-14 days, depending on your taste preference.

Flavoring the Kombucha

    Prepare Flavoring

    After fermentation, remove the SCOBY and set it aside. In a separate bowl, mash 1 cup of blueberries, and mix with 1 tbs of green tea leaves and 1 tbs of mint leaves.

    Mix and Bottle

    Add the mashed blueberry mixture to the fermented kombucha. If desired, add honey to taste. Stir gently to combine.

    Second Fermentation

    Pour the flavored kombucha into bottles, leaving about 1 inch of headspace. Seal the bottles and let them sit at room temperature for another 3-7 days to carbonate.

    Refrigerate and Serve

    Once carbonated, refrigerate the bottles to stop fermentation. Serve chilled and enjoy your Big Island Booch!
