Prepare the Blackened Salmon
Heat the olive oil in a skillet over medium-high heat. Coat the salmon fillets with blackening seasoning on both sides.

Cook the Salmon
Once the oil is hot, add the salmon fillets to the skillet. Cook for about 4-5 minutes on each side or until the salmon is cooked through and has a blackened crust. Remove from heat and let it rest.

Prepare the Avocado Spread
In a bowl, mash the avocados with lime juice, salt, and black pepper. Adjust seasoning to taste.

Toast the Bread
While the salmon is cooking, toast the slices of whole grain bread until golden brown.

Assemble the Toast
Spread the avocado mixture generously on each slice of toasted bread. Top with a piece of blackened salmon.

Garnish and Serve
Garnish with halved cherry tomatoes and chopped fresh cilantro. Serve immediately.
