Prepare the Dough
In a small bowl, dissolve the yeast and honey in warm water. Let it sit for about 5 minutes until frothy. In a larger bowl, combine the gluten-free flour and salt. Add the yeast mixture and olive oil. Mix until a dough forms.

Knead and Rise
On a floured surface, knead the dough for about 5 minutes until smooth. Place it in a greased bowl, cover it, and let it rise in a warm area for 30 minutes.

Preheat and Shape
Preheat the oven to 475°F (245°C). Once the dough has risen, roll it out on parchment paper to your desired flatbread thickness.

Add Toppings
Transfer the rolled-out dough onto a baking sheet. Sprinkle the mozzarella cheese evenly over the top, followed by the cherry tomatoes, red onion, and fresh basil.

Bake in the preheated oven for 12-15 minutes, or until the edges are golden and the cheese is bubbly.

Remove the flatbread from the oven, drizzle with balsamic glaze, slice, and serve warm.
