Roasted Tenderloin

Prepare the Tenderloin
Preheat your oven to 400°F (200°C).

Roast the Tenderloin
Place the tenderloin on a roasting pan and roast for about 25-30 minutes, or until it reaches an internal temperature of 135°F (57°C) for medium-rare.

Rest the Meat
Remove the tenderloin from the oven and let it rest for 10 minutes before slicing.
Bordelaise Sauce

Add Beef Stock
Add the beef stock and fresh thyme to the reduced wine mixture. Simmer for about 10 minutes.

Finish the Sauce
Remove the sauce from heat and whisk in the butter. Season with salt and pepper to taste.
Garlic Mashed Potatoes

Boil the Potatoes
Peel and cut the potatoes into chunks. Boil them in salted water until tender, about 15-20 minutes.

Add Garlic
In the last 5 minutes of cooking, add the garlic cloves to the boiling potatoes.

Asparagus

Prepare the Asparagus
Trim the ends of the asparagus.

Season and Roast
Toss the asparagus with olive oil, salt, and pepper. Roast in the oven alongside the tenderloin for about 10-15 minutes.
