Method
Cooking the Pasta
Boil Water
In a large pot, bring 4-5 liters of water to a rolling boil.
Add Salt
Once the water is boiling, add 1 tablespoon of salt to enhance the pasta's flavor.
Cook Spaghetti
Add 400 grams of spaghetti to the boiling water. Cook according to package instructions until al dente, usually around 8-10 minutes.
Drain Pasta
Once cooked, drain the spaghetti using a colander and set aside. Do not rinse.
Making the Sauce
Heat Oil
In a large skillet, heat 2 tablespoons of olive oil over medium heat.
Sauté Garlic
Add 4 minced garlic cloves to the skillet and sauté for about 1-2 minutes until fragrant, being careful not to burn.
Add Tomatoes
Pour in 800 grams of crushed canned tomatoes and stir to combine with the garlic.
Season the Sauce
Add 1 teaspoon of dried oregano, 1 teaspoon of dried basil, 1 teaspoon of salt, 1 teaspoon of black pepper, and 1 teaspoon of sugar to balance the acidity. Stir well.
Simmer Sauce
Let the sauce simmer on low heat for about 15-20 minutes, stirring occasionally until it thickens.
Combining and Serving
Combine Pasta and Sauce
Add the cooked spaghetti to the sauce in the skillet. Toss to coat the pasta evenly with the sauce.
Serve
Plate the spaghetti and top with 100 grams of grated Parmesan cheese and a few fresh basil leaves for garnish.
