Salad Preparation

Prepare the Greens
Wash the romaine lettuce and assorted spring greens thoroughly under cold water. Spin dry in a salad spinner or pat dry with paper towels. Chop the romaine into bite-sized pieces and place in a large salad bowl.

Add Grilled Chicken
Slice the grilled chicken breast into strips or cubes and add it to the bowl with the chopped greens.

Chop the Vegetables
Core the Granny Smith apple and cut it into thin slices or small cubes. Peel the cucumber and slice it into rounds or half-moons. Add both to the salad bowl.

Add Toppings
Sprinkle the candied pecans, craisins, and bleu cheese crumbles over the salad mixture.
Dressing Preparation

In a small bowl, whisk together the honey, lime juice, olive oil, salt, and black pepper until well combined and emulsified.
