Method

Vegetable Skewers Preparation

    Prepare the Vegetables

    Wash and chop the bell peppers, red onion, zucchini, and cherry tomatoes into bite-sized pieces.

    Marinate the Vegetables

    In a large mixing bowl, combine the chopped vegetables with olive oil, salt, black pepper, and garlic powder. Toss until evenly coated. Let it marinate for at least 15 minutes.

    Skewer the Vegetables

    Thread the marinated vegetables onto skewers, alternating the types for color and variety.

Cilantro Rice Preparation

    Cook the Rice

    In a medium saucepan, combine 1 cup of white rice and 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 18 minutes or until rice is cooked. Remove from heat.

    Add Cilantro and Lime

    Once the rice is cooked, stir in chopped cilantro and lime juice. Fluff with a fork and set aside.

Bang Bang Sauce Preparation

    Mix the Sauce

    In a bowl, combine mayonnaise, sweet chili sauce, and sriracha. Stir until smooth and well mixed.

Grilling

    Preheat the Grill

    Preheat your grill to medium-high heat. Lightly oil the grill grates.

    Grill the Skewers

    Place the vegetable skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the vegetables are tender and slightly charred.
