Chicken Marinade

Prepare the Marinade
In a large bowl, combine olive oil, lemon juice, minced garlic, paprika, salt, black pepper, and cumin. Mix well.

Marinate the Chicken
Cut the boneless chicken breasts into bite-sized pieces and add them to the marinade. Mix to ensure all the chicken pieces are coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for maximum flavor.

Assemble the Skewers
Soak wooden skewers in water for at least 30 minutes to prevent burning. After marinating, thread the marinated chicken, bell peppers, and onion onto the skewers, alternating between ingredients.
Cilantro Rice

Cook the Rice
In a medium saucepan, bring the water to a boil. Add the rice, cover, and reduce heat to low. Cook for 18-20 minutes or until the rice is tender and water is absorbed.

Make the Sauce
In a small saucepan, melt the butter over medium heat. Add minced garlic and sauté until fragrant, about 1 minute. Remove from heat and stir in grated Parmesan cheese and chopped parsley.
