Prepare Sticky Rice
Rinse the sticky rice under cold water until the water runs clear. Combine the rinsed rice and water in a saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until water is absorbed. Remove from heat and let it sit covered for 10 minutes.

Make the Mirin Glaze
In a small bowl, whisk together the sweet mirin, soy sauce, and honey until well combined. Set aside.

Prepare the Salmon
Preheat your oven to 375°F (190°C). Place the salmon fillet on a baking sheet lined with parchment paper. Season with salt and pepper to taste.

Bake the Salmon
Drizzle the mirin glaze over the salmon fillet. Bake in the preheated oven for about 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.

Garnish and Serve
Finely chop the scallions. Once the salmon is done, remove it from the oven and let it rest for a few minutes. Serve the salmon on a bed of sticky rice, garnished with chopped scallions.
