Chop the red and green bell peppers and red onion into chunks.

Thread the chicken pieces, bell peppers, and onion onto the skewers, alternating between them.

Make the Peanut Sauce
In a bowl, mix peanut butter, soy sauce, honey, lime juice, and coconut milk until smooth.

Grill the skewers on medium-high heat for about 10-15 minutes, or until the chicken is fully cooked, turning occasionally.

Cook the sticky rice according to package instructions and set aside.
