Stuffed Portabella Mushrooms

Prepare the Ingredients
Preheat your oven to 375°F (190°C). Clean the portabella mushrooms by removing the stems and gently scraping out the gills. Set aside.

Cook the Sausage
In a skillet over medium heat, add olive oil and sauté minced garlic until fragrant. Add the Italian sausage, breaking it apart with a spatula, and cook until browned. Drain excess fat.

Mix the Filling
In a large bowl, combine the cooked sausage, caramelized onions, queso fresco, and red pepper flakes. Mix well.

Stuff the Mushrooms
Stuff each portabella mushroom cap with the sausage mixture, pressing down gently to pack it in.

Bake
Place the stuffed mushrooms on a baking sheet. Top each with shredded cheese and drizzle with balsamic vinegar. Bake for 20-25 minutes or until the mushrooms are tender and the cheese is melted.
