Roast the Tomatoes
Preheat your oven to 400°F (200°C). In a baking dish, toss the cherry tomatoes with olive oil, salt, and pepper. Roast in the oven for 20-25 minutes or until the tomatoes are soft and slightly caramelized.

Prepare the Pesto
In a food processor, combine the fresh basil leaves, pine nuts, garlic clove, Parmesan cheese, and a pinch of salt. Pulse until finely chopped, then slowly drizzle in olive oil while processing until smooth. Adjust the seasoning as needed.

In a large bowl, combine the roasted tomatoes, fresh mozzarella balls, and thinly sliced red onion. Drizzle with housemade pesto and toss gently to combine.
