Cajun Salmon Skewers

Method

Preparation and Cooking

  1. 1

    Prepare the Ingredients

Cut the salmon fillet into 1-inch cubes. Chop the bell pepper and red onion into similar-sized pieces.

  2. 2

    Marinate the Salmon

In a bowl, combine the salmon cubes with olive oil and Cajun seasoning. Toss until evenly coated and let marinate for 15 minutes.

  3. 3

    Assemble the Skewers

Thread the marinated salmon, bell pepper, and red onion onto the skewers, alternating between the ingredients.

  4. 4

    Bake the Skewers

Preheat the oven to 400°F (200°C). Place the skewers on a baking sheet lined with parchment paper. Bake for 12-15 minutes or until the salmon is medium rare.

  5. 5

    Cook the Sticky Rice

While the skewers are baking, cook the sticky rice according to package instructions.

  6. 6

    Serve

Serve the Cajun salmon skewers over a bed of sticky rice and drizzle with teriyaki sauce.
