    Cook the Spaghetti

    Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve about 1 cup of pasta water, then drain the spaghetti.

    Prepare the Pancetta

    In a large skillet, heat the olive oil over medium heat. Add the diced pancetta and cook until it's crispy and golden brown, about 5-7 minutes. Remove from heat and set aside.

    Make the Sauce

    In a mixing bowl, whisk together the eggs, grated Parmesan cheese, and black pepper until well combined. Set aside.

    Combine Ingredients

    Quickly add the hot spaghetti to the skillet with the pancetta. Stir to combine. Remove from heat, then pour the egg and cheese mixture over the pasta. Toss quickly to combine, adding reserved pasta water a little at a time until the sauce reaches your desired creaminess.

    Season and Serve

    Taste and season with salt and more black pepper if desired. Serve immediately, garnished with extra Parmesan cheese and black pepper.
