Prepare the Sausage

    Mix Ingredients

    In a large bowl, combine ground pork, fennel seeds, crushed red pepper flakes, paprika, garlic powder, salt, black pepper, and chopped parsley. Mix thoroughly until well combined.

    Form Sausages

    Divide the mixture and form into sausage patties or links, depending on your preference. Set aside.

Caramelize the Onions

    Cook Onions

    In a large skillet, heat olive oil over medium heat. Add sliced onions and salt. Cook slowly, stirring occasionally, for about 20-30 minutes until the onions are golden brown and caramelized.

Make the Red Sauce

    Combine Ingredients

    In a saucepan, combine canned crushed tomatoes, minced garlic, dried oregano, dried basil, salt, and black pepper. Stir well to combine.

    Simmer Sauce

    Bring the sauce to a gentle simmer over medium heat. Reduce heat to low and let it simmer for 15-20 minutes, stirring occasionally.

Cook and Assemble

    Cook the Sausages

    In a separate skillet, cook the sausage patties over medium heat until browned and cooked through, about 6-8 minutes per side.
