Roasted Garlic Aioli

Method

Preparing the Roasted Garlic Aioli

    Roast the Garlic

    Preheat your oven to 400°F (200°C). Slice the top off the head of garlic to expose the cloves. Drizzle with olive oil, wrap in foil, and roast for 30-35 minutes until soft.

    Make the Aioli

    Once the garlic is roasted and cool, squeeze the cloves into a bowl. Add mayonnaise, lemon juice, salt, and pepper. Mix until smooth and creamy. Set aside in the refrigerator.

Caramelizing the Onions and Preparing the Jalapeños

    Caramelize the Onions

    Slice the onion thinly. In a skillet over medium heat, add a tablespoon of olive oil. Add the onion and cook slowly, stirring occasionally, for about 15-20 minutes until golden brown and caramelized.

    Roast the Jalapeños

    While the onions are caramelizing, roast the jalapeños. You can do this on a grill or under a broiler until the skins are charred. Place them in a bowl and cover with plastic wrap for 10 minutes to steam, then peel and slice.

Cooking the Burgers

    Cook the Bacon

    In the same skillet used for onions, cook the bacon until crispy. Remove and drain on paper towels, leaving some bacon fat in the pan.

    Form and Cook the Burgers

    Form the ground beef into 4 patties. Season with salt and pepper. In the same skillet with the bacon fat, cook the burger patties over medium-high heat for about 4-5 minutes on each side for medium doneness. Add a slice of pepper jack cheese on top during the last minute of cooking to melt.

Assembling the Burger

    Toast the Buns

    Lightly toast the burger buns on a skillet or grill until golden brown.

    Build the Burger

    Spread a generous amount of roasted garlic aioli on the bottom half of each toasted bun. Layer with a burger patty, followed by two slices of bacon, caramelized onions, and roasted jalapeños. Top with the other half of the bun.
