1. Rinse Quinoa

Place the quinoa in a fine mesh strainer and rinse under cold water for about 2 minutes. This helps remove the bitter coating.

Dice the red bell pepper and zucchini into small cubes. Mince the garlic cloves.

In a medium saucepan, combine the rinsed quinoa and vegetable broth. Bring to a boil, then reduce the heat to low, cover, and simmer for 15 minutes, or until the quinoa is fluffy and the liquid is absorbed.

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant. Then add the diced red bell pepper and zucchini, cooking for another 5 minutes until slightly softened.

5. Add Spinach and Chickpeas

Stir in the spinach and drained chickpeas into the skillet. Cook for an additional 3-4 minutes until the spinach is wilted.
