Burger Preparation

Prepare the Patties
In a large bowl, mix the ground beef, salt, and black pepper until well combined. Form into 4 equal-sized patties.

Cook the Bacon
In a skillet over medium heat, cook the bacon until crispy. Remove and drain on paper towels.

Roast the Jalapeños
Preheat the oven to 400°F (200°C). Place jalapeños on a baking sheet and roast for about 15-20 minutes until the skin is blistered. Remove from the oven, let cool, then slice in half and remove seeds.
Garlic Aioli Preparation

Make the Aioli
In a food processor, blend mayonnaise, roasted garlic cloves (roasted at 400°F for 20 minutes), lemon juice, and salt until smooth. Adjust seasoning to taste.
Burger Assembly

Cook the Patties
In the same skillet, cook the beef patties over medium-high heat for about 3-4 minutes on each side or until cooked to your desired doneness. Add a slice of pepper jack cheese on each patty during the last minute of cooking to melt.

Assemble the Burger
On the bottom half of the burger bun, spread a generous amount of roasted garlic aioli. Place the cooked patty with melted cheese, followed by crispy bacon, caramelized onions, and roasted jalapeños. Top with the other half of the bun.
