    In a small bowl, combine warm water, sugar, and yeast. Let it sit for about 5-10 minutes until frothy.

    Make the Dough

    In a large mixing bowl, mix flour and kosher salt. Add the yeast mixture and melted butter. Stir until a dough forms.

    Knead the Dough

    Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth. Place in a greased bowl, cover, and let it rise for 1 hour.

    Shape the Pretzels

    After the dough has risen, preheat the oven to 450°F (230°C). Divide the dough into small pieces and roll each into a rope about 1 inch thick. Twist into pretzel shapes.

    Prepare Baking Soda Bath

    In a large pot, bring 10 cups of water and baking soda to a boil. Carefully drop each pretzel into the boiling water for about 30 seconds, then remove with a slotted spoon.

    Place the pretzels on a greased baking sheet, sprinkle with coarse sea salt, and bake for 12-15 minutes until golden brown.
