Prepare Chicken

    Marinate Chicken

    In a large bowl, combine buttermilk, cayenne pepper, paprika, garlic powder, salt, and black pepper. Add the chicken thighs, ensuring they are fully submerged. Cover and refrigerate for at least 1 hour or overnight for best results.

    Dredge Chicken

    In a separate bowl, mix the all-purpose flour with a pinch of salt and pepper. Remove the marinated chicken from the fridge and let excess buttermilk drip off. Dredge each piece in the flour mixture until fully coated.

Fry Chicken

    Heat Oil

    In a large, deep skillet or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry Chicken

    Carefully place the coated chicken thighs into the hot oil, frying in batches if necessary to avoid overcrowding. Cook for 6-8 minutes on each side or until golden brown and cooked through. Remove from oil and drain on paper towels.

    Mix Sauce Ingredients

    In a small bowl, combine the hot sauce, melted butter, and honey. Whisk until well blended. Adjust heat by adding more hot sauce if desired.

Assemble Sandwich

    Prepare Toppings

    In a separate bowl, mix the bleu cheese and cream cheese until smooth to make the bleu cheese spread. Set aside.

    Build the Sandwich

    On a toasted bun, spread a generous layer of bleu cheese spread. Add a piece of fried chicken and top with fried pickles, leafy lettuce, and sliced tomatoes. Drizzle with the spicy sauce before closing the sandwich.
