Dry Rub

Ribeye Steak

Crispy Fingerlings

Method

Dry Rub Preparation

  1. 1

    Mix the Dry Rub

In a small bowl, combine brown sugar, paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper. Stir well to mix all the spices evenly.

Ribeye Steak Cooking

  1. 2

    Prepare the Steak

Pat the ribeye steak dry with paper towels. Rub the steak with olive oil and then generously apply the dry rub mixture on all sides. Let it sit at room temperature for 30 minutes.

  2. 3

    Sear the Steak

Preheat a cast-iron skillet over medium-high heat until very hot. Add the ribeye steak and sear for about 4-5 minutes on each side for medium-rare, or until it reaches your desired doneness. Remove from the skillet and let it rest for 10 minutes before slicing.

Cowboy Butter Preparation

  1. 4

    Make the Cowboy Butter

In a mixing bowl, combine unsalted butter, chopped parsley, minced garlic, lemon juice, Worcestershire sauce, salt, and black pepper. Mix well until all ingredients are incorporated. Set aside at room temperature or refrigerate until needed.

Crispy Fingerlings Preparation

  1. 5

    Prepare the Fingerlings

Preheat the oven to 425°F (220°C). Cut the fingerling potatoes in half lengthwise. In a large bowl, toss the potatoes with olive oil, salt, black pepper, and fresh rosemary until evenly coated.

  2. 6

    Bake the Fingerlings

Spread the potatoes on a baking sheet in a single layer. Roast in the oven for about 25-30 minutes, or until golden brown and crispy, flipping halfway through.

BBQ Aioli Preparation

  1. 7

    Make the BBQ Aioli

In a bowl, whisk together mayonnaise, BBQ sauce, lemon juice, garlic powder, and salt until smooth and well combined. Adjust seasoning to taste.
