Prepare the Brussels Sprouts
Trim the ends of the Brussels sprouts and cut them in half. Rinse under cold water and pat dry with a paper towel.

Make the Hot Honey Sauce
In a small bowl, combine honey, red pepper flakes, salt, and black pepper. Mix well and set aside.

Roast the Brussels Sprouts
Preheat the oven to 400°F (200°C). Toss the halved Brussels sprouts in olive oil and season with salt and black pepper. Spread them on a baking sheet in a single layer. Roast for 25-30 minutes or until crispy and golden brown, flipping halfway through.

Add Hot Honey Sauce
Once the Brussels sprouts are done roasting, drizzle the hot honey sauce over them while they are still warm. Toss to coat evenly.

Crumble feta cheese over the Brussels sprouts, and sprinkle chopped chives on top. Squeeze the juice of one lemon over the dish before serving.
