Chicken Preparation

    Marinate the Chicken

    In a bowl, combine olive oil, salt, black pepper, and pesto sauce. Add the chicken breasts and coat well. Let marinate for at least 30 minutes.

    Pan-Sear the Chicken

    Heat a skillet over medium-high heat. Add the marinated chicken and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Remove from heat and let rest.

Grilled Tomato Preparation

    Prepare the Tomatoes

    Preheat the grill to medium heat. Slice the tomatoes in half and brush the cut sides with olive oil, then sprinkle with salt and black pepper.

    Grill the Tomatoes

    Place the tomatoes cut-side down on the grill and cook for about 4-5 minutes, until they are soft and have grill marks. Remove from the grill.

Roasted Garlic Aioli Preparation

    Roast the Garlic

    Preheat the oven to 400°F (200°C). Wrap the garlic cloves in aluminum foil and roast for about 20-25 minutes, until soft. Allow to cool, then squeeze out the garlic into a bowl.

    Make the Aioli

    In a mixing bowl, combine the roasted garlic, mayonnaise, lemon juice, salt, and black pepper. Mix until smooth and well combined.

Assembly

    Assemble the Dish

    On a plate, place the pan-seared chicken, top with grilled tomatoes, a generous dollop of roasted garlic aioli, and sprinkle mozzarella cheese on top. Serve immediately.
