Preparation

    Prepare the Chicken

    Preheat the oven to 375°F (190°C). Rinse the whole chicken under cold water and pat dry with paper towels. Season the chicken inside and out with salt and black pepper.

    Cook the Bacon

    In a skillet over medium heat, cook the bacon slices until crispy. Remove from the skillet and place on paper towels to drain excess fat. Reserve some bacon fat in the skillet.

    Caramelize the Onions

    In the same skillet with the reserved bacon fat, add the sliced onions and cook over medium-low heat. Stir occasionally until they are golden brown and soft, about 15-20 minutes. Remove from heat.

Assembly

    Assemble the Toppings

    Chop the cooked bacon into small pieces. Mix the caramelized onions, chopped bacon, and BBQ sauce in a bowl.

    Stuff and Coat the Chicken

    Stuff the chicken cavity with half of the BBQ mixture. Use the remaining mixture to coat the outside of the chicken.

    Add the Cheeses

    Sprinkle cheddar, mozzarella, and parmesan cheese evenly over the top of the BBQ-coated chicken.

    Roast the Chicken

    Place the prepared chicken in a roasting pan. Roast in the preheated oven for 1 hour 15 minutes or until the internal temperature reaches 165°F (75°C).

    Garnish and Serve

    Once done, remove the chicken from the oven, let it rest for 10 minutes, then garnish with fresh chives before serving.
