    Prepare the Asparagus

    Trim the ends of the asparagus and toss with olive oil, salt, and pepper. Grill or roast in the oven at 400°F (200°C) for about 10-12 minutes until tender.

    Cook the Salmon

    Heat a non-stick skillet over medium-high heat. Season salmon fillets with salt and pepper. Add olive oil to the skillet and sear the salmon for about 4-5 minutes on each side or until cooked through.

    Make the Hollandaise Sauce

    In a heatproof bowl, whisk together egg yolks and lemon juice. Place over a pot of simmering water (double boiler) and whisk constantly until thickened. Gradually whisk in melted butter until creamy. Season with salt and cayenne pepper.

    Serve

    Place the seared salmon on a plate alongside the asparagus, and drizzle with hollandaise sauce. Enjoy!
