Brewing Process

1. Mashing

In a large brew kettle, heat the water to 65°C (149°F). Add the barley malt and optional rice, stirring well. Maintain this temperature for about 60 minutes to convert the starches into sugars.

2. Lautering

After mashing, drain the liquid (wort) from the grains into another kettle. Rinse the grains with hot water to extract more sugars, collecting all the liquid.

3. Boiling

Bring the wort to a boil and add hops. Boil for about 60 minutes, stirring occasionally. This will extract bitterness and aroma from the hops.

4. Cooling

After boiling, cool the wort quickly using a wort chiller or by placing the kettle in an ice bath until it reaches about 20°C (68°F).

5. Fermentation

Transfer the cooled wort to a fermentation vessel and add yeast. Seal the vessel and let it ferment at around 18-20°C (64-68°F) for 1-2 weeks.

6. Bottling

Once fermentation is complete, siphon the beer into clean bottles, leaving some space at the top. Cap the bottles and let them condition for another week.

7. Enjoy
