Burger Preparation

Cook the Barley

In a medium pot, combine 1 cup of pearl barley with 3 cups of water. Bring to a boil, then reduce to a simmer and cover. Cook for about 30-40 minutes until tender. Drain any excess water and let cool.

Prepare the Bean Mixture

In a large mixing bowl, mash the canned black beans with a fork or potato masher until mostly smooth but still slightly chunky.

Combine Ingredients

Add the cooked barley, chopped parsley, chopped cilantro, minced garlic, chopped red onion, grated carrot, ground flaxseed, oats, cumin powder, salt, and black pepper to the mashed beans. Mix well until all ingredients are combined.

Form the Patties

Use your hands to form the mixture into patties, about 1/2 inch thick. You should be able to make about 6 patties.

Cook the Burgers

Heat olive oil in a skillet over medium heat. Once hot, add the patties and cook for about 5-7 minutes on each side, or until golden brown and heated through.

Serve

Serve the Buddha burgers warm on a bun with your favorite toppings such as lettuce, tomato, avocado, or vegan mayo.
