    Prepare the Pork Belly

    Place the pork belly on a roasting rack in a baking dish. Drizzle with olive oil and roast in the preheated oven for 30 minutes.

    Roast the Pork Belly

    Reduce the oven temperature to 300°F (150°C) and continue to roast for an additional 2 hours until the meat is tender and the skin is crispy. Baste occasionally with the drippings.

    Make the Apple Sauce

    While the pork is roasting, peel, core, and chop the apples. In a saucepan, combine the apples, sugar, and a splash of water. Cook over medium heat until the apples are soft and mushy, about 15-20 minutes. Mash or blend to desired consistency.

    Prepare the Pickled Vegetables

    In a separate saucepan, combine vinegar, salt, and 1 cup of water. Bring to a boil, then add the sliced vegetables. Remove from heat and let cool to room temperature. Refrigerate for at least 1 hour before serving.

    Once the pork belly is done, let it rest for 10 minutes before slicing. Serve with apple sauce and pickled vegetables on the side.
