    Prepare the Onions

    Slice the yellow onions thinly. In a large pot, melt the butter and olive oil over medium heat. Add the onions and salt, and cook, stirring frequently, until the onions are caramelized and golden brown, about 30-40 minutes.

    Deglaze the Pot

    Once the onions are caramelized, add the dry white wine to the pot. Scrape the bottom of the pot to deglaze and cook for an additional 5 minutes, allowing the wine to reduce slightly.

    Add Broth and Seasoning

    Stir in the beef broth, pepper, thyme, and bay leaf. Bring the soup to a simmer and let it cook for about 20 minutes to allow the flavors to meld.

    Prepare the Bread and Cheese

    While the soup is simmering, preheat your oven to 350°F (175°C). Place the French bread slices on a baking sheet and toast them in the oven for about 10 minutes, until golden.

    Remove the bay leaf from the soup. Ladle the soup into bowls, top each bowl with a toasted slice of bread, and sprinkle with Gruyère cheese. Place the bowls under the broiler for 2-3 minutes until the cheese is bubbly and golden.
