Directions
- 1
Prepare the Slaw
In a large bowl, mix the shredded cabbage and carrots together. In a separate small bowl, combine mayonnaise, lemon juice, and salt. Pour the dressing over the cabbage mixture and toss to combine. Refrigerate for at least 30 minutes.
- 2
Make the Batter
In a large bowl, whisk together the flour, cornstarch, baking powder, salt, black pepper, and Italian seasoning. Gradually whisk in the Budweiser beer until smooth. The batter should be thick enough to coat the fish.
- 3
Prepare the Fish
Dip each fish fillet into the batter, allowing excess to drip off.
- 4
Fry the Fish
In a large skillet, heat olive oil over medium-high heat. Once hot, carefully place the batter-coated fish into the oil. Fry for about 4-5 minutes per side or until golden brown and cooked through. Remove and drain on paper towels.
- 5
Cook the French Fries
While the fish is frying, prepare the french fries according to package instructions or deep fry until golden and crispy.
- 6
Serve
Serve the fried fish with a side of slaw and crispy french fries. Garnish with parsley.
