    Cook Barley

    In a pot, bring 3 cups of water to a boil. Add 1 cup of barley, reduce heat, and simmer for about 30-40 minutes until tender. Drain and set aside.

    Prepare Beans

    In a mixing bowl, mash the canned black beans with a fork or potato masher until mostly smooth but still slightly chunky.

    Combine Ingredients

    In the same bowl, add the cooked barley, parsley, cilantro, minced garlic, chopped onion, cumin, salt, black pepper, and olive oil. Mix well until combined.

    Form Patties

    Gradually add whole wheat flour to the mixture until it holds together. Form the mixture into 4 equal-sized patties.

    Cook Patties

    Heat a non-stick skillet over medium heat. Add a little olive oil if needed. Cook patties for about 5-7 minutes on each side, or until golden brown.

    Assemble Burger

    Place each patty on a burger bun. Top with lettuce, tomato slices, and avocado. Serve immediately.
