Prepare the Potatoes

Wash and dice the potatoes into small cubes. Boil them in salted water for about 10 minutes or until tender, then drain and set aside.

Sauté Vegetables

In a large skillet, heat olive oil over medium heat. Add diced onions and bell peppers, cooking until softened (about 5 minutes). Stir in the cooked potatoes and spinach, cooking until the spinach wilts.

Scramble the Eggs

In a bowl, whisk together the eggs, salt, and pepper. Pour the egg mixture over the sautéed vegetables in the skillet. Cook, stirring gently, until the eggs are just set.

Add Cheese and Mixed Greens

Remove from heat and stir in the Wisconsin white cheddar cheese until melted. Serve over a bed of mixed greens.
