Make the Pie Crust

In a large bowl, mix the flour and salt. Cut in butter until the mixture resembles coarse crumbs. Add cold water, one tablespoon at a time, until the dough comes together. Form into a disk, wrap in plastic, and refrigerate for 30 minutes.

Preheat the oven to 425°F (220°C).

In a mixing bowl, combine the pumpkin puree, granulated sugar, brown sugar, eggs, heavy cream, cinnamon, ginger, nutmeg, salt, and vanilla extract. Whisk until smooth.

On a floured surface, roll out the chilled dough into a 12-inch circle. Fit into a 9-inch pie pan and trim excess dough.
