Burrito Filling

Method

Prepare the Burrito Filling

1

Cook the Vegetables

In a skillet over medium heat, add diced bell pepper and onion. Sauté until softened, about 5 minutes.

2

Scramble the Eggs

In a bowl, whisk together the eggs. Pour into the skillet with the vegetables, and scramble until fully cooked.

3

Add Sausage and Cheese

Stir in the crumbled sausage and shredded pepper jack cheese until the cheese is melted and everything is well combined.

Make the Salsa

4

Combine Ingredients

In a bowl, mix diced avocados, tomatillos, chopped cilantro, lime juice, and salt. Mash lightly to combine, leaving some chunks for texture.

Prepare the Mixed Greens

5

Dress the Greens

In a large bowl, toss mixed greens with olive oil, balsamic vinegar, and season with salt and pepper to taste.

Assemble the Burritos

6

Fill the Tortillas

Lay a tortilla flat and spoon the egg mixture into the center. Fold in the sides and roll it up tightly.

7

Serve

Serve the burritos warm with a generous scoop of avocado tomatillo salsa on top and a side of dressed mixed greens.
