Method

Preparing the Potatoes

    Preheat the Oven

    Preheat your oven to 400°F (200°C).

    Wash and Cut Potatoes

    Wash the russet potatoes thoroughly under cold water. Pat them dry with a towel. Using a sharp knife, cut each potato in half lengthwise.

    Scoop Out Potatoes

    Using a spoon, carefully scoop out some of the flesh from each half, leaving about 1/4 inch of potato to create a skin.

    Season and Oil

    Brush the potato skins with olive oil and sprinkle with salt and black pepper on both sides.

Baking and Topping

    Bake the Potato Skins

    Place the prepared potato skins cut-side down on a baking sheet. Bake in the preheated oven for 20-25 minutes, or until crispy and golden brown.

    Add Toppings

    Remove the potato skins from the oven. Carefully flip them over and fill each skin with shredded cheddar cheese, crumbled bacon, and chopped green onions.

    Return the loaded potato skins to the oven and bake for an additional 5-10 minutes, until the cheese is melted and bubbly.

Serving

    Remove the potato skins from the oven. Serve hot with a side of sour cream for dipping.
