Preparation and Cooking

    Prepare the Roasted Garlic

    Preheat your oven to 400°F (200°C). Cut the top off the head of garlic to expose the cloves. Drizzle with olive oil, wrap in foil, and roast for 30-35 minutes until soft and fragrant.

    Caramelize the Onions

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add sliced onions and a pinch of salt. Cook, stirring frequently, for about 20-25 minutes until they are golden brown and caramelized. Remove from heat and set aside.

    Prepare the Ribeye Steak

    Take the ribeye steak out of the refrigerator and let it come to room temperature for about 30 minutes. Preheat a grill or skillet over high heat. Rub both sides of the steak with the remaining olive oil, salt, and black pepper.

    Cook the Steak

    Sear the steak on the hot grill or skillet for 4-5 minutes on each side for medium-rare, or adjust the time for your preferred doneness. When done, remove from heat and let it rest for 5-10 minutes.

    Assemble the Dish

    Slice the roasted garlic and mash it into a paste. Spread the garlic paste over the steak. Top with caramelized onions, and sprinkle shredded sharp provolone cheese over the top. Finally, add a generous layer of herb breadcrumbs.

    Finish Cooking

    Place the assembled steak under the broiler for 2-3 minutes until the cheese is melted and bubbly. Remove from the oven.

    Slice the steak against the grain and serve immediately, garnished with any remaining caramelized onions and breadcrumbs.
