Chargrilled Boneless Rib-Eye

    Prepare the Rib-Eye

    Take the boneless rib-eye steaks out of the refrigerator and let them sit at room temperature for about 30 minutes before cooking.

    Marinate the Steaks

    In a bowl, mix together olive oil, minced garlic, chopped rosemary, salt, and black pepper. Rub this mixture all over the rib-eye steaks. Let it marinate for at least 15 minutes.

    Preheat the Grill

    Preheat your grill to high heat (about 450°F to 500°F).

    Grill the Steaks

    Place the marinated rib-eye steaks on the hot grill. Grill for about 4-5 minutes on each side for medium-rare, adjusting cooking time to your desired doneness.

    Rest the Steaks

    Remove the steaks from the grill and let them rest for 5-10 minutes before slicing.

Roasted Marbled Potatoes

    Preheat your oven to 400°F (200°C).

    In a bowl, toss halved marbled potatoes with olive oil, salt, black pepper, and chopped rosemary until evenly coated.

    Spread the seasoned potatoes on a baking sheet in a single layer and roast in the preheated oven for 25-30 minutes, or until golden brown and tender. Stir halfway through.

Salmoriglio Sauce

    In a small bowl, whisk together olive oil, lemon juice, minced garlic, chopped parsley, salt, and black pepper until well combined.

    Drizzle the salmoriglio sauce over the grilled rib-eye steaks just before serving.

Wild Arugula Salad

    In a bowl, combine wild arugula, lemon zest, olive oil, salt, and black pepper. Toss gently to combine.
