Cooking Instructions
- 1
Cook the Pasta
In a large pot of boiling salted water, cook the strozzapreti pasta according to the package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.
- 2
Sauté Shallots
In a large skillet, heat the olive oil over medium heat. Add the chopped shallots and sauté for about 2-3 minutes until they become translucent and fragrant.
- 3
Add Shrimp
Add the shrimp to the skillet and cook for about 3-4 minutes until they turn pink and are cooked through. Season with salt and black pepper to taste.
- 4
Incorporate Chili Paste
Stir in the Calabrian chili paste and cook for an additional minute, mixing well to incorporate the flavors.
- 5
Add Tomatoes
Pour in the crushed San Marzano tomatoes, and bring the mixture to a simmer. Allow it to cook for about 5 minutes, letting the flavors meld together.
- 6
Mix in Heavy Cream
Reduce the heat to low and stir in the heavy cream. Let it simmer for another 3-4 minutes until the sauce thickens slightly.
- 7
Combine Pasta and Sauce
Add the cooked strozzapreti pasta to the skillet, tossing to combine and coat the pasta with the sauce. If the sauce is too thick, add reserved pasta water a little at a time until the desired consistency is reached.
- 8
Finish with Cheese
Remove from heat and stir in the grated Grana Padano cheese until melted and well incorporated. Adjust seasoning with salt and black pepper to taste.
- 9
Serve
Plate the strozzapreti shrimp alla vodka and garnish with additional grated Grana Padano cheese if desired. Serve immediately.
