Prepare the Tomatoes
Preheat your oven to 425°F (220°C). Wash the baby tomatoes and cut them in half. Place them on a baking sheet, cut side up.

Blister the Tomatoes
Drizzle 2 tablespoons of extra virgin olive oil over the halved tomatoes. Sprinkle with salt and black pepper to taste. Roast in the preheated oven for about 15-20 minutes, or until the tomatoes are blistered and slightly caramelized.

Toast the Bread
In a skillet over medium heat, toast the bread slices for about 2-3 minutes on each side, or until golden brown and crispy. Alternatively, you can toast them in the oven for the same amount of time.

Assemble the Bruschetta
Once the tomatoes are roasted, allow them to cool slightly. Spread a generous layer of stracciatella cheese on each toasted bread slice. Top with the blistered baby tomatoes and tear fresh basil leaves over the top.

Drizzle a little extra virgin olive oil over the assembled bruschetta. Serve immediately as an appetizer.
