Method

Dough Preparation

  1. 1

    Make the dough

In a large mixing bowl, combine the all-purpose flour, granulated sugar, and salt. Cut in the unsalted butter until the mixture resembles coarse crumbs.

  2. 2

    Add wet ingredients

In a separate bowl, whisk together the eggs and cold water. Gradually add the egg mixture to the flour mixture, mixing until a dough forms.

  3. 3

    Chill the dough

Wrap the dough in plastic wrap and refrigerate for at least 1 hour.

Filling Preparation

  1. 4

    Prepare the filling

In a mixing bowl, combine the ricotta cheese, granulated sugar, vanilla extract, and candied orange peel. Mix until smooth and well combined.

Assembly and Baking

  1. 5

    Roll out the dough

On a floured surface, roll out the chilled dough to about 1/8 inch thick.

  2. 6

    Cut and fill

Cut the dough into squares (about 4x4 inches). Place a tablespoon of the ricotta filling in the center of each square.

  3. 7

    Fold and seal

Fold the dough over the filling to form a triangle. Press the edges to seal tightly.

  4. 8

    Bake the sfogliatelle

Preheat the oven to 375°F (190°C). Place the filled pastries on a lined baking sheet and bake for 25-30 minutes or until golden brown.

Finishing Touch

  1. 9

    Dust with powdered sugar

Once the sfogliatelle are cool, dust generously with powdered sugar before serving.
