Make the dough
In a large mixing bowl, combine the all-purpose flour, granulated sugar, and salt. Cut in the unsalted butter until the mixture resembles coarse crumbs.

Chill the dough
Wrap the dough in plastic wrap and refrigerate for at least 1 hour.
Filling Preparation

Prepare the filling
In a mixing bowl, combine the ricotta cheese, granulated sugar, vanilla extract, and candied orange peel. Mix until smooth and well combined.
Assembly and Baking

Roll out the dough
On a floured surface, roll out the chilled dough to about 1/8 inch thick.

Cut and fill
Cut the dough into squares (about 4x4 inches). Place a tablespoon of the ricotta filling in the center of each square.

Fold and seal
Fold the dough over the filling to form a triangle. Press the edges to seal tightly.

Bake the sfogliatelle
Preheat the oven to 375°F (190°C). Place the filled pastries on a lined baking sheet and bake for 25-30 minutes or until golden brown.
