    In a small bowl, sprinkle the gelatin powder over the water and let it sit for about 5 minutes until it blooms.

    In a mixing bowl, beat the cream cheese and granulated sugar until smooth and creamy. Add in the heavy cream, vanilla extract, and lemon juice. Mix until well combined.

    Incorporate the Eggs

    Add the eggs to the cream cheese mixture one at a time, beating well after each addition until fully incorporated.

    Melt the Gelatin

    In a small saucepan, gently heat the bloomed gelatin over low heat until completely dissolved. Make sure it does not boil.

    Combine Gelatin with Mixture

    Slowly pour the melted gelatin into the cheesecake mixture, stirring constantly to ensure it is evenly distributed.
