Prepare the Cheese
Slice the Kefalotyri cheese into 1/2 inch thick pieces. This will ensure even melting and a perfect crust.

Grill the Ciabatta
Grill the ciabatta slices on medium heat until they are golden brown and crispy on both sides. Set aside.
Cooking

Heat the Cheese
In a skillet over medium-high heat, add the sliced Kefalotyri cheese and cook for about 2-3 minutes on each side, or until a golden crust forms.

Flambé the Cheese
Carefully add the Ouzo or Brandy to the skillet. Using a long lighter or match, ignite the alcohol to flambé. Allow the flames to subside as the alcohol burns off, approximately 30 seconds.
Serving

Plate and Serve
Transfer the flambéed cheese to a serving plate, squeeze fresh lemon juice over the top, and serve immediately with grilled ciabatta slices on the side.
