Method

Roasting the Mushrooms

    Preheat the Oven

    Preheat your oven to 200°C (400°F).

    Prepare the Mushrooms

    In a bowl, toss the wild mushrooms with olive oil, salt, and black pepper until evenly coated.

    Roast the Mushrooms

    Spread the mushrooms in a single layer on a baking sheet and roast in the preheated oven for about 20-25 minutes or until golden and tender, stirring halfway through.

Caramelizing the Leeks

    Sauté the Leeks

    In a large skillet, melt the butter over medium heat. Add the sliced leeks and salt, cooking gently until the leeks are soft and caramelized, about 15-20 minutes, stirring occasionally.

Making the Parmigiano Cream

    Heat the Cream

    In a saucepan over medium heat, bring the heavy cream to a simmer.

    Add the Cheese

    Stir in the grated Parmigiano-Reggiano cheese and salt until the cheese is fully melted and the mixture is smooth. Remove from heat.

Assembly

    Plate the Dish

    On a serving platter, layer the roasted mushrooms, followed by dollops of stracciatella cheese.

    Top with the caramelized leeks and drizzle the warm Parmigiano cream over everything.
