Prepare the Bolognese Sauce

Cook the Meat
In a large skillet, heat olive oil over medium heat. Add the chopped onion, diced carrot, and diced celery. Sauté until softened, about 5 minutes. Add the minced garlic and cook for an additional minute. Then, add the ground beef, ground pork, and ground veal. Cook until browned.

Deglaze and Simmer
Pour in the red wine and bring to a simmer. Allow it to reduce for about 5 minutes. Stir in the San Marzano tomatoes, dried oregano, dried basil, salt, and black pepper. Reduce heat to low and let it simmer for 30 minutes, stirring occasionally.
Prepare the Ricotta Mixture

Mix the Ingredients
In a bowl, combine ricotta cheese, egg, grated Parmesan cheese, salt, and black pepper. Mix until smooth and well combined.
Layer the Lasagna

Preheat Oven
Preheat your oven to 180°C (350°F).

First Layer
Spread a thin layer of the Bolognese sauce on the bottom of a large baking dish. Place 3 sheets of lasagna noodles over the sauce.

Add Cheese Mixture
Spread a layer of the ricotta mixture over the noodles, followed by another layer of Bolognese sauce.

Repeat Layers
Continue layering by adding 3 more sheets of noodles, more ricotta, and Bolognese sauce. Repeat this process until you have 12 layers, finishing with Bolognese sauce on top.

Add Toppings
Top with shredded mozzarella and grated Parmesan cheese.
Bake the Lasagna

Cover and Bake
Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.

Uncover and Brown
After 30 minutes, remove the foil and bake for an additional 15-20 minutes, or until the cheese is golden and bubbly.

Remove the lasagna from the oven and let it rest for 15 minutes before slicing and serving.
