Prepare the Carrots
Preheat your oven to 400°F (200°C). Wash the heirloom carrots thoroughly and slice them lengthwise into halves or quarters, depending on their size.

Season the Carrots
In a large bowl, toss the sliced carrots with olive oil, Urfa pepper, and salt until evenly coated.

Roast the Carrots
Spread the seasoned carrots in a single layer on a baking sheet. Roast in the preheated oven for 25-30 minutes, stirring halfway through, until the carrots are tender and caramelized.

Candy the Pecans
While the carrots are roasting, heat a small skillet over medium heat. Add the pecans and brown sugar, stirring frequently until the sugar melts and coats the pecans, about 3-5 minutes. Remove from heat and set aside.

Combine and Serve
Once the carrots are done roasting, remove them from the oven and transfer to a serving platter. Sprinkle the candied pecans, fresh dill, fresh mint, and lemon juice over the carrots. Serve warm.
