Begin by slicing the tomato and setting aside. Split the English muffins in half.

Cook the Eggs

In a non-stick skillet, heat the olive oil over medium heat. Crack the eggs into the skillet and cook to your desired doneness, seasoning with salt and pepper.

Toast the Muffins

While the eggs are cooking, toast the English muffins until golden brown.

Assemble the Sandwich

Spread 2 tablespoons of herb aioli on each half of the toasted English muffins. On the bottom half, layer arugula, a slice of ham, cooked egg, and sliced tomato. Top with the other half of the muffin.
