    Peel and dice the potatoes into small cubes. Heat olive oil in a skillet over medium heat, add potatoes, and cook, stirring occasionally, until golden brown and crispy, about 15-20 minutes. Season with salt and pepper.

    In a double boiler, melt butter. In a bowl, whisk together egg yolks, lemon juice, and pesto. Gradually add melted butter while whisking continuously until the mixture thickens. Season with salt and pepper.

    Bring a pot of water to a gentle simmer. Crack each egg into a small bowl and gently slide into the water. Poach for about 3-4 minutes until whites are set but yolks are still runny. Remove with a slotted spoon and set aside.
